Vinification: Destemmed and crushed, 12 hours pre-fermentation maceration; cold static clarification for 48 hours; selective yeast with temperature-controlled alcoholic fermentation (16-18ºC)

Colour: Lemon yellow core with hints of green flecks
Aroma: Extraordinarily intense, complex, with mineral notes of grapefruit and notes of well integrated and high quality oak
Ageing: Final third stage fermented in 300L French oak barrels (2nd and 3rd year old barrels); fermented with skin contact: batonnage for 9 months
Soil: Schist
Weather: Hot and dry climate large thermal gap
Taste: Surprisingly wide, full of volume, concentration and with a good acidity. The result is an elegant, fresh and well balanced profile
Final Notes: Very long and lingering finish
Gastronomy: Pairs well with elegant cuisine, or alternatively, with rich dishes that require balance and acidity
